  • 4 ounces (113 grams) of high-quality dark chocolate (around 70% cocoa), chopped
  • 1/2 cup (1 stick or 113 grams) of unsalted butter
  • 1/2 cup (100 grams) of granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (30 grams) of all-purpose flour
  • Pinch of salt
  • Optional: Cocoa powder or powdered sugar for dusting
  • Optional: Ice cream or whipped cream for serving
  1. Preheat your oven to 425°F (220°C). Grease and lightly flour individual ramekins or small oven-safe dishes. This recipe typically makes four servings.
  2. In a heatproof bowl, melt the chopped dark chocolate and butter together. You can use a double boiler or microwave in short intervals, stirring frequently until smooth. Set aside to cool slightly.
  3. In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined.
  4. Gradually pour the melted chocolate mixture into the sugar and egg mixture, whisking continuously until smooth.
  5. Sift the all-purpose flour and salt into the chocolate mixture. Gently fold the dry ingredients into the mixture until just combined, being careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins or oven-safe dishes, filling each about three-fourths full.
  7. Place the filled ramekins on a baking sheet and transfer them to the preheated oven.
  8. Bake for approximately 12-14 minutes. The edges of the cakes should be set, but the centers should still be slightly soft and jiggly.
  9. Carefully remove the baking sheet from the oven and let the cakes cool in the ramekins for a few minutes.
