Vegan Tacos

For the filling:

  • 1 can (15 ounces or 425 grams) of black beans, drained and rinsed
  • 1 cup (150 grams) of corn kernels (fresh or frozen)
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of chili powder
  • Salt and pepper, to taste

For the toppings:

  • Tortillas (corn or flour)
  • Sliced avocado
  • Diced tomatoes
  • Chopped lettuce or cabbage
  • Sliced jalapeños (optional)
  • Fresh cilantro, chopped
  • Lime wedges

Optional toppings:

  • Vegan sour cream
  • Salsa or hot sauce
  • Vegan cheese (shredded or crumbled)

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and the garlic is fragrant.
  2. Add the drained black beans and corn kernels to the skillet. Stir in the ground cumin, chili powder, salt, and pepper. Cook for a few minutes until the flavors meld together and the mixture is heated through. Adjust the seasonings to taste.
